Steps

1. Photograph the site BEFORE with GPS on and a legible timestamp; confirm you are inside the posting radius.
2. 2. Document the current practice as it is actually run, not as it is described.
3. 3. Write the method for each station: sequence, holds, temperatures, and waste routing.
4. 4. Verify against the FDA Food Code: cook and hold temperatures, cooling windows, separation.
5. 5. Walk one full service with the sheet in place and record every deviation.
6. 6. Revise the sheet where reality is safer or better than the draft.
7. 7. Train the crew on the final sheet and log who was trained and when.
8. Photograph AFTER from the same position as the before shot.

If it does not match the plan

• Documented practice conflicts with the Food Code -> the Code wins; rewrite the method.
• A step depends on one named person's judgement -> it is not a method; make it explicit or remove it.
• Crew cannot follow the sheet in real service -> the sheet is wrong, not the crew; revise it.
• Any cooling or holding step missing a time and temperature -> incomplete; do not sign off.

• Deviations recorded from one full observed service
• Training log naming who was trained and when
• Every hold and cool step carrying a time and a temperature
