Photograph every utility meter (electric, gas) with its serial and current reading, dated.
Photograph the nameplate of each major fixed load reachable without opening panels: HVAC units, water heater, refrigeration, cook line, signage.
List which loads run outside working hours and which of those could be off, checking closing-time practice against the list.
Write the one-page idle-hours card: what is switched off at close, what must stay on and why, who flips what.
Post the card at the panel or office and photograph it in place; repeat the meter photo on the same day next month to start the cadence.
