Steps
- Walk the kitchen's surplus and trim with the chef and pick what preserves well this week (high-acid pickles, ferments, dried herbs and produce).
- Preserve by a tested method — water-bath canning for high-acid items only, lacto-fermentation, or dehydrating — labelling each batch with contents and date.
- Store the finished preserves correctly and record the shelf life and intended menu use of each batch.
- Photograph the surplus before and the labelled finished preserves after, and log the weight saved from the bin.
