What the work involvesA Green Star kitchen looks at a carrot top and sees stock. Kitchens on this block still throw trim, bones and peel to landfill and pay to have organics collected too. A whole-ingredient prep and diversion setup turns that stream into stock, staff meal and compost — the Green Star's zero-waste criterion made physical.

Steps
- Walk the kitchen's waste flow with the chef and photograph what currently leaves as trim, bones, peel and plate scrape.
- Set up a whole-ingredient prep station (labelled bins for stock scraps, staff-meal usables, and compostables) with simple signage at each prep point.
- Confirm the organics-diversion pickup or on-site composter and align the bins to its cadence; walk the shift through what goes where.
- Log the first week's diverted and reused weights with the chef and photograph the finished station and signage.
