Walk the kitchen's waste flow with the chef and photograph what currently leaves as trim, bones, peel and plate scrape.
Set up a whole-ingredient prep station (labelled bins for stock scraps, staff-meal usables, and compostables) with simple signage at each prep point.
Confirm the organics-diversion pickup or on-site composter and align the bins to its cadence; walk the shift through what goes where.
Log the first week's diverted and reused weights with the chef and photograph the finished station and signage.
