Steps

  1. Sanitize hands, surfaces, and equipment before food contact; wear hair covering/apron.
  2. Prep the plant base (beans/grains/seasonal vegetables) per the venue's permitted-kitchen plan.
  3. Portion the animal-protein component modestly (egg, dairy, or pastured meat) to stretch across the full meal count rather than serving it as the centerpiece.
  4. Hold hot-held food at safe temperature through service; discard anything held out of range.
  5. Photograph the finished meal, and record the meal count, destination, and the protein source's origin.
