Every station stocked before service, every cut the same size, the hundredth plate as good as the first. Cooks call it mise en place, everything in its place, and a kitchen that has it looks calm even at full speed. That calm is built from small repetitions, nothing else. A packet like this one is a single repetition: one task, done to the written spec, checked and recorded. That is how hands learn a craft. There is no other way.

What is promised, and what is not
