  1. Sort the rescued produce with the kitchen host and match each lot to freeze, can, or same-week use.
  2. Wash, trim, and blanch freezer lots, bagging labeled and dated.
  3. Process high-acid canning lots per USDA times in the water-bath canner.
  4. Label everything with contents and date and log the totals.
  5. Photograph the finished labeled lots and the tally with GPS and date.
